No-bake Chocolate Oat Cookies

Delicious and satisfying chocolate cookies that are healthier than your average cookie and require no baking.

No-bake Chocolate Oat Cookies

No-bake recipes are my favourite kind of recipes. They’re so much quicker to make and a lot easier to master and get right. These no-bake chocolate oat cookies are a great example of that. You mix all the ingredients in a bowl, then shape into cookies and you’re done! You do have to wait for them to set in the fridge, but that’s the hardest part of the recipe. 

This is one of those recipes that you can make when you want need a quick chocolate fix, but you’re not in the mood for baking. They’re also perfect for those warm summer days when you don’t feel like turning the oven on. My flat already feels like an oven, so the last thing I want to do is to add another source of heat. 

They have a lovely chewy bite to them and they’re packed with great ingredients like oats, almond butter and cocoa butter. It would make a great alternative chocolate treat for kids and an easy way to get some extra fibre into their diets.

No-bake Chocolate Oat Cookies

Makes – 12

Ingredients

125g (1/2 cup) natural almond butter – you can substitute with peanut butter
35g (1/4 cup) coconut oil, melted
60 ml (1/4 cup) maple syrup
60ml (1/4 cup) milk of choice
220g (2 cups) gluten-free oats
4 tbsp cacao or cocoa powder
Pinch of salt

Method

Dry toast the oats in a frying pan for 5-7 minutes.
Transfer into a bowl and in the cocoa, salt, almond butter, coconut oil, maple syrup and milk. Mix until everything is well combined. 
Using an ice cream scoop or a tablespoon, scoop out the mixture and drop onto a baking sheet lined with baking paper. Shape into round cookies and refrigerate until set.
